But I here recommend you to step up one more !
That’s “Standing Sushi”.
There, you stand in front of the counter, then just opposite of you, the cook will make your order and pass it to you directly.
That means the sushi will be fresh much more than the one moving on the conveyor belt.
Furthermore, this is just my impression, but I suppose the quality of sushi materials (fishes and shells) and the level of the cooks are originally higher than conveyor belt sushi.
