I love Motsu-yaki !
I believe many Japanese guys love it too.
Motsu-yaki (もつ焼) is the grilled pork tripe on stick like Yakitori (焼鳥). You know Yakitori is chiken and its tripe but Motsu-yaki is pork and its tripes.

One of the most famous, popular and classic Motsyaki bar is Akitaya (秋田屋) in Hamamatsu-cho.
Akitaya is founded on 1929 !! Everyday crowded even from day time. They open 15:30 !! I wonder what are the people who drink from daytime working ?! lol

Every menu is ordered from 2 sticks then you need to select taste, salt or tare (source). If you don't have any idea, say "omakase (up to you)".
